Triple Chocolate Tiffin

Makes 18 slices

 

Ingredients:

100g Unsalted Butter

40g Caster Sugar

50g Golden Syrup

15g Cocoa Powder

20 Rich Tea Biscuits

30g Raisins

200g Dark Chocolate

50g Milk Chocolate

50g White Chocolate

20 Glace Cherries

Method:

Break up the biscuits with a rolling pin, make sure to leave some chunks of biscuit. Then cut the glace cherries in half and set aside.

Put the butter, sugar and golden syrup in a pan, melt on a medium heat but don't let any boiling occur. Add the cocoa powder and stir thoroughly.

Turn off the heat and add the cherries, crushed biscuits and raisins into the mixture. Then, let the mixture cool completely then add small chunks of the milk and white chocolate.

Push the mixture into a lined tin and let it set in a fridge for 10 minutes.

 

Next, melt the dark chocolate and pour over the tiffin to create an even layer of chocolate.

Return to the fridge and then serve. 

Citrus Mousse

Makes 4 

 

Ingredients:

300ml Double or Whipping cream

100ml Condensed milk

Zest of one Large Lemon

Zest of one Large Orange

1Tsp of Lemon juice

30g Orange and lemon peel to decorate

Method:

Whip the cream until it resembles soft peaks. Then add the condensed milk slowly ensuring that it has been combined thoroughly.

Next, take the orange and lemon zest and put that into the condensed milk and cream mixture. Mix the zest until combined but not so much as the zest will stick to the whisk.

Lastly, pour the lemon juice into the mousse and fold it in quickly to prevent the mousse becoming liquid.

 

Transfer the mousse into small dishes or tins. To serve, sprinkle a small handful of the orange and lemon peel. Enjoy!
